RECIPE: Mixed Berry Muffins

This week's recipe is your go-to solution for a quick and easy snack. It's also a great recipe that your kids can get involved with making, to help boost their cooking skills.

INGREDIENTS:

  • 3 cups wholemeal self-raising flour

  • 2 eggs, whisked

  • 3/4 cup low fat Greek or natural yoghurt

  • 1-1.5 cups almond or skim milk

  • 2 cups frozen mixed berries, thawed

  • 3 tbs honey

METHOD:

  1. Preheat oven to 180 degrees.

  2. Combine eggs, yoghurt, almond milk, berries and honey in a bowl.

  3. Sift in flour and fold into wet mixture until just combined.

  4. Spoon the mixture into a non-stick muffin tin or muffin tin lightly sprayed with canola oil.

  5. Bake for 15-20 mins or until set. To test, insert a skewer; if it comes out clean, the muffins are finished!
