RECIPE: Veggie Sausage Rolls

These tasty sausage rolls are a quick and easy meal prep, giving you lunches for the whole week! Change up the veggies you use for different flavours or preferences.

INGREDIENTS

  • 1/2 cup quick cook oats

  • 800g beef or turkey mince

  • 1 onion, diced

  • 2 zucchinis, grated

  • 2 carrots, grated

  • 1 cup diced mushrooms

  • 1 red capsicum, diced

  • 1 large granny smith apple, grated

  • 2 eggs (1 for brushing edges to fold wrap)

  • 2 tbsp tomato paste

  • 1 bunch parsley or coriander, chopped

  • 1/4 tsp paprika

  • 8 mountain bread wraps

  • Salt and pepper to taste

METHOD

  1. Preheat oven to 180°C.

  2. Place all ingredients except the wraps in a large bowl and mix.

  3. With clean, dry hands, place the mince mixture down one edge of mountain bread wrap in a sausage shape.

  4. Brush edges of wrap with whisked egg and roll firmly. Brush remaining egg on top. Cut into two pieces.

  5. Repeat with the remaining wraps and mixture.

  6. Place on a tray lined with foil and bake for 25 minutes.

TIP: You can use any vegetables for these sausage rolls. Other great ideas are grated pumpkin and sweet potato to increase carbohydrate content for heavier training days.
